Bread Using Water Roux

I have been making my own bread for several years and my goodness, silly me only found out about water roux recently while surfing the internet.  I tried it but I might have got it wrong though. When it was freshly baked, the texture was so soft and springy. However, come the following day, the bread has become a little harder.  Only the good old microwave will ensure that my family have soft and fluffy bread after MV-ing these babies for 1/2 min.

Guess I have to keep making more bread to get this right.  I really want that soft, fluffy and springy texture without using bread improver or bread softener.

Teriyaki Chicken Noodles


We have always been eating teriyaki chicken as one of our side dishes for our main meals especially dinner. Normally, we will have a chicken dish, a soup dish, a vegetable dish and another side dish. This will be eaten with white rice.  The other half suggested that we should turn it to a noodle dish. So, here it is...teriyaki chicken noodle.  We have eaten something similar in a restaurant before. Hmm...not bad at all.  We shall add this dish into our "monthly to eat" list...ha!ha!

Mooncakes


Happy Mid-Autumn Mooncake Festival!!!

There was a small celebration at our local town council.  When I was young, I often look forward to this celebration as I could stay up late and night, walking around the neighbourhood with my friends in the moonlight of the huge round moon, holding paper lanterns and chit-chatting.  I also love hearing the stories about the moon such as Chang Er, The Jade Rabbit, etc told by the older generations.

Each year I just make the simplest of the simplest...lazy...ha!ha!  For the skin, I just use plain flour, peanut oil, lye water and golden syrup. As for the filling, I always get the lotus paste from the local Asian grocery shop, salted duck eggs and kua chi.  I just bake these babies in the oven for 20 mins @ 200 degrees C.

Char Siew (BBQ Pork Meat)


Char Siew is a popular dish in my household. We use char siew for so many dishes. We eat alone, with rice, with noddles, use as one of the ingredients in the fried rice, etc.  I have heard of stories where there is a secret recipe for this awesome dish. However, I just use five spice powder, honey, red fermented tofu, hoisin sauce and chinese cooking wine to make mine.  Its pretty easy to do and we spend less than $10 to get the above piece.  If we buy it in chinatown, it will at least cost us more than $40...

Marble Cake


Marble cake simply put is a basic cake with 1/4 of the batter mixed with cocoa powder. I am one of those who can never get a nice marble design. Its always comes out with moo moo patches...sigh!!! Anyway, as my other half puts its...as long as it taste nice, I am not complaining...ha!ha!  I was telling the other half that I  should try my hands on roll cakes....something different from the normal cakes which I normally bake for my household.
