Simple Scones

The smell of scones in the oven early in the morning...

A warm scone on your plate...with strawberry jam sliding down the edge of the scone...
Sounds yummylicious?





Well...you can make your own scones in 20 mins or so.
Start by pre-heating your oven. Mine is without a fan...so 220 degrees C for me.
This is how it went for me on a cold Saturday morning in winter time...
While waiting for my oven to get hot, I get the dry ingredients ready and pop it into a huge bowl.
Add in the cut butter and use my finger tips to rub in into the flour...it should look like breadcrumbs.
Dig a well, add in the sugar and the cold water.
Combine it together and knead into a soft dough.  Do not over-knead or your scones will be hard.
To test if your dough is just right, touch the dough with your index finger...it should be springy.
Let it rest for 10 mins.
Roll out the dough on a floured surface so that the bottom will not stick - 2cm thick is just right for me.
Use a floured cookie cutter and stamp out the scones.  Press sharply and firmly down. DO NOT twist.
Place them close together on the baking tray and bake for 15 mins or till golden brown.
That's it....ta-daa!
